This has only recently started....
Start the car up and the stereo is on mute, it was not on mute when I turned the car off.
When I press the start/stop button to turn the engine off the stereo turns off. It should only turn off when I depress the key.

Try pressing the audio unit power button (volume control) and see if that changes it?
Never anthropomorphise computers. They hate that.
