Tyre advice

Hi guys right simple question are there any safety reasons why you shouldn't use winter tyres in the summer? Specifically perelli scorpion ice and snow.
Now for the long reason why.
I have only a small amount of life left in my current summer set (19"sport staggered) and 4/5 mm on my newly acquired winter wheels (thanks tractorjacob) with tyres mentioned above. Which from what I have read here they are pretty good but for where we live out in the sticks I want more of an A/T tyre ( prob go for general grabber at's)
we are heading over to Italy in August and will prob do 2.5/3k which means the current summer set will have to be replaced before we go so do I:
1-Replace summers now and drive to Italy, then replace winters with A/T's in oct putting the scorpions in the shed/eBay or
2-Put the winters on now wear them out over the summer replacing they in oct for A/T's and replace the summers in the spring when the summer wheels go back on.
I am leaning towards 2 as it will spread the cost over 9/10 months instead of 2 sets of tyres in the next 4. Ofcourse only if its safe to do so.
